LA FERME DE LA SAPINIERE, VERONIQUE and MICHEL LEGALLOIS
Veronique, Michel, and Philippe Legallois produce their hard cider, pommeau, and calvados, at St-Laurent-sur-Mer, where at the beginning of the 16th century, Marin-Onfroy, the Sieur of St-Laurent, brought back from the Biscaye region of Spain, a variety of late season sweet cider apple which is named for him.

Brothers Michel and Philippe grow this and 22 other apple varieties in their orchards at St-Laurent. In the fall begins the long and meticulous process of transforming the apples into cider.

In 2007, La Sapiniere's ciders took both a St-Jean d'Or (Gold) and a St-Jean d'Argent (Silver) prizes at the St. Jean des Cidres competition.

The effervescent Veronique, Michel's wife, warmly welcomes visitors to the farm's boutique with a glass of cider, pommeau, calvados, or Saporange, a liquor in which oranges are macerated in calvados, the farm's specialty.
